F OR THE C ANDIED N UTS Place a piece of parchment paper near the stove. In a non-stick skillet over medium heat, melt the butter. Add pecans, syrup, brown sugar, and pinch of salt. With a wooden spoon, stir continuously for about 3 to 5 minutes or until the nuts are coated. Once the nuts are completely coated and they have soaked up the liquid, remove the nuts to the parch- ment paper and spread them apart to cool. Allow the nuts to completely cool and store in an airtight con- tainer for up to 4 weeks. H OLIDAY H AM If using a fresh ham, score the ham spiraling diagonally one way around the entire ham then spiraling the opposite direction making a diamond pattern around the ham about 1 inch apart. Place into the oven until the temperature reaches 145 degrees. Ingredients: 1/4 cup garlic powder 1/4 cup ground cumin 1/4 cup ground coriander 1/4 cup paprika 1 tablespoon kosher salt 1 teaspoons ground black pepper 1 (8 pound) fresh ham, bone in and skin removed 1/3 cup Alaga Original Cane Syrup 3 tablespoons Dijon Mustard 1/4 cup unsalted butter, melted Instructions: In a small bowl, combine first 6 ingredients. Score the outside of ham in a diamond patter; cover entire ham with spice mixture. Cover and refrigerate for 8 hours. Remove ham from the refrigerator, and allow to come to room temperature. Preheat oven to 425 degrees. On a roasting pan, place ham fat side up. Bake at 425 degrees for 45 minutes, then lower the tem- perature to 325 and bake for another 1 1/2 hours, or until internal temperature reaches 135 degrees. Combine glaze ingredients together and baste every 30 minutes, or until the temperature of ham reaches 145 degrees.
