INGREDIENTS • 8 cups kale (packed) with center ribs and stems removed, coarsely chopped • 2 Tablespoons olive oil • 3/4 cup chopped onions (red onions go well with greens) • 1/4 teaspoon smoked paprika • Pinch of crushed red pepper • Salt and pepper to taste DIRECTIONS • Cook the kale in a large pot of boiling salted water until tender. Time will depend on the age of the kale. Drain. (Reserve the liquid for vegetable stock). • Heat 1 Tablespoon olive oil in a large skillet over medium heat. Add onion and saute until soft, about 5 minutes. • Stir in smoked paprika and red pepper; sprinkle with salt. • Add kale and saute until heated through, about 4 minutes. • Season to taste with salt, pepper, and smoked paprika to taste. • Drizzle with 1 Tablespoon olive oil and serve. n DiAnna is a contributing photographer to ALMetro360 magazine.
