There is nothing quite like movie-theater popcorn. But, you can have that at home, too! All you need is a large soup pot, coconut oil and clarified butter — and popcorn, of course. Melt the coconut oil in your soup pot over high heat. Add the popcorn kernels, and swirl to coat all the kernels. Shake the pot frequently to avoid burning. Once the first kernel pops (about a minute or two), immediately place the lid on the pot, but leave it ajar so steam can escape. Continue shaking the pot frequently until the popping slows down. Once it does slow down, remove the pot from the heat and let sit for a fewmin- utes while the final kernels pop. Finish with a drizzle of clarified butter and season with fine salt.
