Chicken Salad Chick, a fast-casual restaurant originally based in Auburn, offers 15 original chicken salad variations that origi- nated in the home kitchen of founder Stacy Brown. In the Fall of 2012, Simply Southern Restaurant Group, the ex- clusive franchisor of Chicken Salad Chick, and franchise owners Justin and Cassie Boyd, opened the first of three Chicken Salad Chick restaurants in Montgomery and Prattville.
